Healthy Breakfast Recipes for Weight Loss: Eggs Are Your Best Friend

1. Bausti’s breakfast

Serves 1-2

Ingredients

• 3 medium-sized organic / free-range eggs

• 40 g of zucchini

• 60 g lightly steamed cauliflower

• 60 g of cooked chicken

• Chili flakes

• Mixed vegetables

Method

1. Preheat the oven to 180oC.

2. Chop everything into small pieces.

3. Fill 6 medium-size muffin boxes halfway with chicken and vegetables.

4. Beat 2 of the eggs and add some chili flakes, then pour the egg chili mixture in equal parts into each muffin box and bake in the oven for about 7 min.

5. Beat the remaining egg.

6. Fill the muffins with the remaining egg (the reason is that the beaten eggs form a bit and then harden during the baking process leaving room for refilling).

7. Bake for another 7 – 8 minutes, serve on a bed of vegetables.

2. Eggy Asparagus Soldiers

Serves 1

Ingredients

• 2 large organic free-range eggs

• 4 asparagus

• 1 teaspoon of coconut oil

• Sea salt

• Black pepper

Method

1. Boil enough water in a pot to cover the eggs 1 cm.

2. Once boiled, place the eggs gently in the water to prevent them from breaking; boil for 5 minutes to obtain a smooth consistency.

3. While the eggs are boiling, heat the oil in a frying pan and cook the asparagus for 2-3 min.

4. Place the eggs in an egg cup and serve the soldered asparagus for dipping, season if necessary.
